Warning: You WILL Get Caught Eating A Whole Pumpkin Loaf If You Try This Recipe

Afternoon everyone. Or should I say evening. Boy where did the day go?
How was everyone's Labor Day Weekend?
Ours was really good. We had some relax time, chore time and eating time!
Sure wish we could have three day weekends more often. They never seem to be long enough.

As for today. Today was short? I swear we just woke up a few hours ago and now it's dinner time.
Doesn't help that we had alot of errands to run. One that took nearly two hours due to poor customer service. UGH.
Oh well. Made the day go faster and is getting us closer to the weekend.

During naptime today (and before all the madness of errands) I was able to make up some pumpkin bread. I got some new mini loaf pans from Michaels this weekend, so I was wanting to give them try. Not to mention I love pumpkin ;) Bring on the fall recipes!

Below is a picture of my creations, as well as the recipe. It's a very simple one & requires basic materials you probably have already.


Pumpkin Bread

3 1/3 cup white flour
2 tsp baking soda
1 1/2 tsp salt
2 tsp cinnamon
1 tsp nutmeg
1 tsp ginger
3 cups sugar
4 eggs
2/3 cups water
2 cups canned pumpkin puree
1 cup vegetable oil

Combine all dry ingredients in a bowl. Mix together. Add remaining ingredients and beat well. Pour into 2 large 9x5 inch greased and floured loaf pans (I actually was able to do 7 mini loafs) Bake at 350 for 1 hour (or if you do in mini pans, cut the time to 30-45 minutes) Bake until a toothpick comes out clean. Let cool in pans and then enjoy!

It's really good and worth sharing! (Note, it's so good I'm making my husband take some to work tomorrow, so we don't eat it all & can't fit in our pants :)
